Dan Pashman’s Fajita Marinade

 

This is the internet's best guess at the fajita marinade used at Pappasito's in Houston, which was the inspiration for his mom's fajita marinade and ties into a story he shares about his mom. Dan’s mom doesn't have or remember the exact recipe other than that she was using the closest thing to Pappasito's and that it had pineapple juice and soy sauce in a 2 to 1 ratio, but this is the closest he can get and it’s amazing!

 
Ingredients

Serves 4 to 6

Ingredients

1 cup pineapple juice

1/2 cup soy sauce

4 fresh squeezed limes

1/4 cup fresh cilantro

1 jalapeno

1/3 cup onions

2 tsp cumin

STEP 1

Whisk together all ingredients in a bowl.

Step 2

Add marinade to your fajita meat and let marinate in the refrigerator for 6-8 hours or overnight. Cook your meat and enjoy!!

This marinade is now a “GO -TO” in the Norris-Johnson household. I suggest making extra or setting some marinade aside (did not touch raw meat) and heat and use as an “au jus” dipper for your assembled fajitas!
