Big Freedia’s “Turn The Heat” Up Sausage Po'Boy
HAPPY MARDI GRAS! 🎉 Who better to celebrate this special day with than New Orleans legend and the Queen of Bounce herself, Big Freedia?
On this latest episode Freedia joined us to discuss what it was like growing up in the Big Easy. She reminisced about the two-bedroom shotgun house she grew up in with her mom, Ms. V, and how the kitchen was the place to be as a lifelong food aficionado. From “ghetto lasanga”, to smothered pork chops, to turkey wings and barbecue ribs (this making you hungry too?), there was always something delicious being cooked up in her mama’s kitchen. Freedia also shares some memories from her Aunt Deborah—the “Big Mama” of the family, as Freedia describes—who devoted her culinary skills to not only feeding her family, but the neighborhood and the homeless as well. We also get to hear stories of Freedia’s coming-out experience at 13, the devastation of Hurricane Katrina hitting NOLA, and how she used bounce music as a communal healing tool.
Many of you may know Freedia from her *multiple* collaborations with another Queen Bee: Beyoncé! Well, Freedia shares what it was like to receive that first call from Beyoncé and to be featured on not one, but two of her biggest tracks. 🐝
Ingredients
Serves 4 to 6
Ingredients
One container of Patton's Hot Beef Patties (2 lbs)
7 slices of American cheese
(or any preferred variety like cheddar)
10-12 eggs
2-3 Tbsp butter
1 tsp sea salt
Dash of black pepper
2 Tbsp of parsley
1/3 cup of mayonnaise
2 tsp of Crystal hot sauce
(or hot sauce of your choice)
1/2 cup olive oil
1 large Poboy bread roll (Frenchbread rolls)
STEP 1
Whisk eggs together in a bowl
Scramble mixture in skillet over medium heat over oil
SAUCE
Mix together mayonnaise, hot sauce, and 3 Tbsp olive oil, parsley, salt and pepper to taste.
Assemble
1.) Cut bread down the center and toast lightly in oven at 350
2.) Add Patties
3.) Top with scrambled eggs
4.) Add Patties
5.) Pour sauce over
6.) Close sandwich, cut in half and serve!
