Essie’s Noodle Pudding

 

Generations of young readers have turned to Judy Blume for wisdom, humor and emotional comfort in books like “Superfudge,” “Tiger Eyes” and “Are You There God, It’s Me Margaret”. And on this episode she dusts off her mother, Essie’s, yellow recipe box to share with us her tried and true— cherished Noodle Pudding recipe.

We hope you enjoy this recipe as much as young Judy did. It’s a sweet one with a whole cup of sugar!

 
Ingredients
  • 6 eggs at room temperature

    1 pint of sour cream (not reduced fat)

    1 pound cottage cheese (not reduced fat)

    1 ¼ cups whole milk

    2 tsp salt

    2 tsp vanilla

    ¼ cup melted butter, cooled

    1 cup sugar

    1 pound bag of broad egg noodles

Step 1

Cook noodles al dente, drain, and set aside

Step 2

 Preheat oven to 350 degrees

Step 3

Butter a 9x13x2 baking dish

Step 4

Separate eggs into two large bowls

Step 5

Combine yolks, cottage cheese, sour cream, milk, salt, vanilla, sugar, and butter in one bowl and Add noodles to combined ingredients

Step 6

Whip egg whites with a clean beater until they form stiff peaks

Step 7

Fold beaten egg whites into other ingredients

Step 8

Transfer to buttered baking dish. Bake at 350 for approximately one hour and golden brown and set.
