Jeff Tweedy’s “The Dish”
Jeff Tweedy shares a family favorite meal they call “The Dish”. It’s a really simple, healthy vegetarian dish that his kids and family started eating a lot in their high school years.
Ingredients
brown rice
chopped carrots
chopped baby tomatoes
chives
diced avocado
sliced-up avocado
sesame chili oil

Cook the rice to your liking.
Step 2
Chop up the veggies.

Toss in some chili oil and enjoy!

Jeff is the youngest in his family and by the time he came along, his mother had gone to work and didn’t have time to cook much. Dinner was often a Filet O’ Fish sandwich because she was busy. And yet they had a great relationship in the kitchen. She was the first listener for all of his early songs at the family’s yellow Formica table. Now that he has his own family, Jeff cherishes and prioritizes mealtime and on his episode of Your Mama’s Kitchen he told me that this is his family’s all time favorite dish. It’s simply called “The Dish.”
It is a great dish if you have some brown rice on hand or if you’ve got leftover brown rice you need to use. Chop up the carrots, baby tomatoes and avocado. If you want less crunch then you can use carrots that have been steamed, sautéed or roasted but still have some body to them.
Mix the ingredients together and top with chili oil. You can also top with chili oil at the table so everyone can add the amount that feels right to them. (Mild to five alarm!) Season to your liking and you can be creative here with Garlic salt, paprika, Cumin, dried herbs, five spice, Tajin, Old Bay, Oregano, soy sauce or Coconut Amino Acids if you have an aversion to soy. Save the sliced avocados for garnish. And you might want to also hit it with some chopped Italian parsley.
